How It All Began
To smoke or not to smoke that is the question.
How’s that for a start. It all started back in Edgewater, N.J. I was16 years of
age and looking for work. The season was spring the start of the Shad migration
up the Hudson River. A old salt was running a smoke house operation and needed
someone to help with the manual labor. I jumped at the chance and that year
learned how to clean, brine, and smoke Shad.
The following year I received a phone call from
the Ingolds, the family who sets the nets on the Hudson if I was interested in
running the smoke house for them. Hey, I took it. That year for 12 weeks I
smoked and sold close to 10 tons of Shad. Not bad for a 17 year old teen. Well
that’s how it started.
15 years later I got the bug to smoke my own
food and to make my own sausages. I’m on my third smoker and she is a honey. A
Bradley Digital 6 rack smoker with all the bells and whistles. I plan on super
charging her with what I call my one shot. I’m saving that modification for
another day. I’ll let the guys on the forum know about it when I’m finished.
